I FREAKING DID IT!!!! This was my 2nd loaf. My first one failed but not with this recipe. I even got two ears. I did preheat my oven with the Dutch oven for an hour while it rose the final time. I also did a water bath below it. I’m so excited to share this with my coworkers. I’ve turned 3 others onto sourdough. 2 are using my starter. So far this is the 1st loaf of our group. We have done discard recipes but I really wanted sourdough bread. Thank you so much!!!

It’ll be fine on the counter for that long at that temp! My house is set at 65 at night and it does great.

It is 12:30 pm. I read some of the comments that said I could leave it on the counter for as long as 18 hours. So I could maybe bake it at 6:00 or 7:00 tomorrow morning. My problem is that we keep our house temp as low as 65 at night. Can I leave it on the counter or do I need to put it in the oven with the light on.

I would love to make a jalapeño cheddar loaf but I’m unsure of when in the process you’d add those ingredients. Any guidance? Better yet, do you have a specific recipe?

I personally don’t use the cloth in the basket but you totally can, just flour it well. It kinds of just a personal preference thing.
